Maple Walnut Muffins Recipe

Ah, Maple and Walnut. A classic combination. I do not know who decided these two things go well together, but kudos to that person, or persons. I’m sure there are other nut/maple combos that work as a substitute so go to town and let us know what you think. This recipe comes from a favourite book of muffin recipes called: Magnificent Muffins Cookbook, Printed back in 1984 and published by Magnificent Cookbooks Publishing, Inc.

Preheat Oven to 425 Fahrenheit

Dry Mixture

2 cups All Purpose Flour
1 tbsp baking powder
1 tsp salt
1/4 tsp cinnamon
1/2 cup chopped walnuts

Moist Mixture

1 Large Egg
1/2 cup melted butter
1/3 cup Maple Syrup
2/3 cup of milk
1/2 tsp vanilla extract

Topping

3 tbsp Granulated Sugar
1/4 tsp cinnamon
3 tbsp chopped walnuts

In a large mixing bowl combine all dry ingredients. In a separate bowl beat egg and vanilla together lightly. Melt butter over low heat and stir in milk and maple syrup. Add butter mixture to beaten egg mixture and stir to combine. Add moist mixture to dry mixture all at once and stir until batter is just blended. Mix together sugar and cinnamon for topping. Fill prepared muffin tins 2/3 full and sprinkle with sugar and cinnamon topping. Then sprinkle chopped walnuts on top. Bake for 20 minutes or until top is golden brown and tester comes out clean.
